SWINE-BREEDING "Cinta Senese"

The “Cinta Senese” is a swine race of very ancient origin, extremely sought-after for the excellent quality of its meats. These are excellent both for fresh and for the production of various kind of cold meats and salami.
In the past stockbreeders replaced this wild and local race with more productive foreign races suitable for fixed stalling.Risking extinction, it is actually marked as “relic race”. 
To “defend” the future of this local race and to help the process of revaluation of by-products, since 2001 the company has started this swine-breeding, which now lives quietly in the holm-oak woods of the company.

OLIVE GROVE

The system has been done ex novo in 2001.Our olives are of precious varieties like the Leccino, Moraiolo, Coregiolo, Frantoio and the Pendolino, so that we can get an extra-virgin quality oil (DOP) and we can also start an oil production “in pureness” i.e. from olives of different qualities.ORCHARD
The company has also a new orchard. Fruit-bearing plants are made of cherry , apricot, fig, pear, apple and citrus trees.

VEGETABLES

The company has some parts of soil with vegetables, which are naturally cultivated without any chemical treatment and fertilizer. The company uses the whole high quality production to prepare meals and/or tasting.
